Triticum aestivum ssp spelta, WINTER: Light golden seed in a long narrow head. While spelt is notoriously difficult to thresh, this variety is selected from free-threshing seeds, though is first generation so additional selection will be necessary.  Spelt was an important staple in parts of Europe from the Bronze Age to medieval times and is now getting very popular again with claims of health benefits and ease of digestion for gluten and wheat sensitivities. Has a slightly sweet and nutty flavour. Extremely hardy.
